2medium sizered potatoesor white or russet

Instructions
If your chicken needs to be thawed out just put it in the microwave with the proper settings. While that is going on clean and slice the potatoes into about 3/8" slices. Cut the ends off of the onion, peel it and slice it into about 1/2" slices. Be careful handling the onion slices because they will want to come undone.
Put your stovetop grill on the stove at medium high and spray or wipe it with olive oil.Spread the veggies out on the cutting board and lightly drizzle or spray with olive oil. Salt and pepper them then turn them over and do the other side. Spread them out on the grill (or cookie sheet) leaving room for the chicken. As the veggies get started drizzle the chicken with olive oil, lightly sprinkle salt, black pepper, cayenne pepper or crushed red pepper. Toss the chicken to get it all coated with the oil and spices. Add the chicken to the grill (or cookie sheet) and after about 3-4 minutes turn everything over and give the other side the same treatment.
Then serve it up! We had a good California SAUVIGNON BLANC with our cheap, fast and very good dinner. It all went together real well.
