Potato Fritters

 


Yes, our version of Potato Fritters is quick and easy enough to make on a busy weeknight. And, they have  also become a favorite for when we have company over.  You will like this quick, easy and delicious version of Potato Fritters. You can cook them in a skillet or for bigger batches on a cookie sheet in the oven. 

Ingredients

These amounts are for 3 servings. To change all of the ingredients amounts for a different number of servings just scroll down to the recipe card below this posting and change the number of servings. That will change all of the ingredient amounts. You can also change the amounts to metric.

 

  • 2 Medium size white potatoes 
  • 2 Medium size sweet potatoes 
  • 1/2 stick butter
  • 1/2 cup grated parmesan cheese
  • salt and pepper – to taste

 

Here’s how to quickly and easily throw together your Potato Fritters

Rinse off the white potatoes (don’t peel them) and cut them into 1-1/2 or 2 inch chunks . Don’t cut up or peel the sweet potatoes. Just poke some holes in them. Put them into a microwave safe bowl,,

 

 

and zap them until they are soft enough to squash them with your fingers. Six to ten minutes depending on the size of your chunks and your microwave oven.

Put the white potato chunks in a mixing bowl and using 2 table knives or a whisk break them up into small pieces. Then cut the sweet potatoes in half lengthwise and scoop the flesh out of the skin and into the bowl. Put a skillet on at medium high and swirl in just enough olive oil to coat the bottom. 

 

 

Add the butter, cheese, salt and pepper to the bowl. Mash and whisk it all together with a large whisk or your hand held electric mixer. 

 

 

When the butter has melted and it’s all mixed together hand shape them into 3 – 6 fritters and add them to the skillet.

 

 

About 3-4 minutes a side. After you turn them over flatten them just a little with your flipper. Then when they are warmed up and have got a little crust serve them up and enjoy them. Us, and our friends and family really like them and I bet that you will too.

 

 

An added note: When you want to make a bigger batch, pre heat the oven at 400°F.  Line a cookie sheet with parchment paper and using a ice cream scoop or a tablespoon just put the scoops of potato mix on the cookie sheet and into the oven. for about 10 minutes..
