You will enjoy these Sautéed Zucchini Slices. Adding them to pasta like we did tonight. Or, just by itself as a veggie side dish. And, they cook up quickly on a busy weeknight. Tonight we had it along with some extra meaty bolognese.

Here’s what you will need

These amounts are for 2 servings. If you want different servings amounts scroll down to the recipe card that is below this posting. There you can change the number of servings and it will change all of the amounts of all the ingredients. Also you can switch the amounts to metric.

 

  • olive oil – non extra virgin will work but extra virgin is a little tastier.
  • One large or two small fresh zucchini
  • 3-4 cloves of garlic 
  • salt and pepper – to taste 
  • 1 tbsp. dried basil or 2 tbsp. chopped fresh
  • 1/3 of a 1 lb. box of pasta – I recommend a string pasta like spaghetti or linguini for this recipe

And here is how to easily whip up your Sautéed Zucchini Slices

If you are going to have your Sautéed Zucchini Slices on pasta put the pot of salted water on the stove. Add the pasta to the pot. Stir the pasta a few times as it cooks. Put a skillet on your stove at medium.  Eyeball enough olive oil to coat the bottom of the skillet. Rinse off and pat dry the zucchini. Slice the zucchini into about 1/8 inch thick slices. Add all of the ingredients (except the pasta) to the skillet.

Gently stir or flip everything together as it all cooks.

And as soon the zucchini is as soft as you like the pasta should ready. Drain the pasta and add it to the skillet.

Then serve it all up and enjoy your Sautéed Zucchini Slices with pasta.
