Sautéed Zucchini Slices

Zucchini slices and garlic sautéed in olive oil.

Ingredients
 
 

  • olive oil non extra virgin will work but extra virgin tastes a little better
  • one large or 2 small fresh zucchinis
  • 3-4 cloves garlic
  • salt and pepper - to taste
  • 1 tbsp. dried basil or 2 tbsp. chopped fresh
  • 1/3 of a 1 lb. box pasta I recommend a string pasta like spaghetti or linguini for this recipe

Instructions
 

  • If you are going to have your Sautéed Zucchini Slices on pasta put the pot of salted water on the stove. Add the pasta to the pot. Stir the pasta a few times as it cooks. Put a skillet on your stove at medium.  Eyeball enough olive oil to coat the bottom of the skillet. Rinse off and pat dry the zucchini. Slice the zucchini into about 1/8 inch thick slices. Add all of the ingredients (except the pasta) to the skillet.
  • Gently stir or flip everything together as it all cooks.
    And as soon the zucchini is as soft as you like the pasta should ready. Drain the pasta and add it to the skillet.
    Then serve it all up and enjoy your Sautéed Zucchini Slices with pasta.
