Panini – Italian Grilled Sandwich

Growing up in New Jersey I sure got to sample Panini sandwiches a lot of different ways in a lot of different little Sub shops. This is the way that I always went back to. I’ve also converted Gammy to being a Panini fan,  but, I have to do her’s gluten free so I make a gluten free roll for her. You can make Panini’s with a ton of different ingredients. Just do it how YOU want.

First make the rolls with some of Poppop’s easy homemade  bread recipe or just go with some store bought stuff. Ciabatta rolls make real good Panini. 

Next comes the Roasted Red Peppers. Basically just rinse it off and put it (or them) them on a square of aluminum foil on it’s side and put it under the broiler. As a side blackens turn it to get it blackened all over. Then stand it on the stem end and blacken the bottom.

Let it cool for a couple of minutes then cut in half lengthwise and remove the stem and the seeds. lightly brush the skin off with a serrated edge steak knife.

Slice (about 1/8″ slices) enough of the fresh Mozzarella to cover the rolls. Then add the prosciutto slices then the pepper.

Cover with the top half of the rolls and put them on your stove top grill or in your Panini iron or just go with skillets. Put a heavy dish on them and turn them over when the grill side gets browned, if you’re not using a Panini iron.

Ingredients

  • 2 sub rolls approximately 6"
  • 4 thin slices of good prosciutto or boiled ham
  • 6 slices fresh Mozzarella about 1/8" thick
  • 1 fresh red pepper
