Poppop
A grilled Italian sandwich

Ingredients
 
 

  • 2 sub rolls approximately 6"
  • 4 thin slices of good prosciutto or boiled ham
  • 6 slices fresh Mozzarella about 1/8" thick
  • 1 fresh red pepper

Instructions
 

  • First make the rolls with some of Poppop's easy homemade bread recipe or just go with some store bought stuff. Ciabatta rolls make real good Panini.
  • Next comes the Roasted Red Peppers. Basically just rinse it off and put it (or them) them on a square of aluminum foil on it's side and put it under the broiler.
  • As a side blackens turn it to get it blackened all over. Then stand it on the stem end and blacken the bottom.
  • Let it cool for a couple of minutes then cut in half lengthwise and remove the stem and the seeds. lightly brush the skin off with a serrated edge knife.
  • Slice (about 1/8" slices) enough of the wet Mozzarella to cover the rolls. Then add the prosciutto slices then the pepper.
  • Cover with the top half of the rolls and put them on your stove top grill or in your Panini iron or just go with skillets. Put a heavy dish on them and turn them over when the grill side gets browned,
