Garlic Chicken with Parmesan Sauce
Garlic Chicken with Parmesan Sauce is the recipe that we have settled on as our favorite way to enjoy Garlic Chicken. If you google Garlic Chicken you will find lots and lots of different twists on this quick and easy dish. We’ve had it in a lot of different real good Italian restaurants and I’ve made it a lot of different ways. This is the one we like the best.
Ingredients
for 2 servings
- 1 large chicken breast
- 2 tbsp. olive oil
- salt and pepper
- 4 cloves garlic – chopped
- 1/3 cup white wine
- 1/3 cup dried parsley or twice as much chopped fresh parsley
- 1/3 cup grated parmesan cheese
And here is how to easily cook up your Garlic Chicken
First butterfly a large skinless, boneless chicken breast. But, don’t stop for a “butterfly”. Slice it all the way through so that you wind up with two thin filets.. Or, you could just go with 4-6 chicken tenders. Put a skillet on at medium high and eyeball enough olive oil to coat the bottom. Season the chicken pieces with salt and pepper then place them in the skillet.
Cook for 2-4 minutes a side depending on the thickness. While the chicken is cooking chop up the garlic. When the chicken is firm to a finger poke or they read 165° on a meat thermometer they are done. Remove them to a plate that will catch the drippings.
Add the garlic to the pan and scrape the bits of chicken off the bottom with a wooden spoon.
As soon as the garlic starts to sizzle add the white wine, grated parmesan cheese and the parsley.
Stir it all together and let it come up to a simmer. Return the chicken and the drippings to the pan and turn them over a couple of times as they warm back up. Just a minute or so.
