Ingredients
1Large chicken breastbutterflied or 2 small ones or 4-6 tenders
2tbsp.olive oil
salt and pepper
4clovesgarlic, chopped
1/3cupwhite wine
1/3cupdried parsley
1/3cupgrated parmesan cheese
Instructions
First butterfly a large skinless, boneless chicken breast. Or, you could just go with 4-6 chicken tenders. Put a skillet on at medium high and add 2 tbsp. of olive oil. Season the chicken pieces with salt and pepper then place them in the skillet. Cook 2-4 minutes a side depending on the thickness. While the chicken is cooking chop up the garlic. When the chicken is firm to a finger poke and/or the liquid running out is clear they are done. Remove them to a plate that will catch the drippings.
Add the garlic to the pan and scrape the bits off the bottom with a wooden spoon. As soon as the garlic starts to sizzle add the white wine, grated parmesan cheese and the parsley.Stir it all together and let it come up to a simmer. Put the chicken and the drippings into the pan and turn them over a couple of times as they warm back up. Just a minute or so.
