This Easy Chicken Piccata Recipe definitely qualifies as a Quick and Easy weeknight dinner. Plus, it’s as good as it is quick and easy. When we are going to have company over and we ask what they would like for dinner, Chicken Piccata is one of the favorites. It’s history goes back to Italy where it was originally prepared with veal. But, in the USA it is just about always done with chicken. Like we’re going to do it right now. 


 

What you will need

  • 2 small chicken breasts or 1 large breast split horizontally
  • olive oil
  • salt and pepper to taste
  • 1 tbsp.garlic powder
  • 1 tbsp. dried basil or 2 tbsp. chopped fresh
  • 3/4 cup white wine
  • 1 tbsp. butter
  • 1/2 lemon juiced
  • 1 tbsp. capers

 

 

Here’s how to make this Easy Chicken Piccata 

 

Put a skillet on at medium high and eyeball a couple of tablespoons of olive oil. Salt, pepper and garlic powder the up side of the chicken filets and lay them in the skillet with the seasoned side down. Then salt, pepper and garlic powder the new up side. Cook them for about 2-4 minutes a side depending on how thick they are. When they are firm to a poke or read 165° on an instant read meat thermometer they are ready for the rest of the ingredients.

Bring the liquid up to a slow simmer and reduce the heat to just maintain the simmer. When the wine has reduced and thickened a little serve up your Chicken Piccata.
