Lemon Butter Cod Filets – Gluten Free – Twenty Minutes

Lemon Butter Cod Filets

I did this Lemon Butter Cod Filets recipe just for me tonight. Gammy is on a special diet for the next week or so. And, I really like codfish, so, I treated myself good. 


The veggies and carb were sautéed string beans with onion and garlic and a smashed potato. Two more of my quick and easy favorites.

If your codfish needs to be thawed out just put them into a bowl with more than enough water to just cover them up. If they are fresh and ready to go just have them on standby while you get the other things going.

Put two skillets on the stove at medium high. Drizzle enough olive oil to cover the bottom in the veggie one. Add the butter to the other one and squeeze in the lemon juice. Add the lemon rind to the skillet also.

Put the potato (s) in the microwave and zap them for about two minutes. Just enough to get them a little soft. They are going to finish up in the skillet.

While the potato (s) are in the microwave rinse off the string beans and trim off the ugly end. Cut the onion into thin strips and chop up the garlic.

Add the veggies and the potato (s) to their skillet. Smash the potato (s) and

add the cod to its skillet. With the gray side up. Sprinkle a pinch of dried dill weed on the cod. If you don’t have any dried dill weed dried basil or parsley will work.

After about two minutes turn the veggies and the potato over.

And the same with the cod. Sprinkle another pinch of the dried dill weed on up side of the fillet.

Of course I had some of Poppop’s easy homemade bread. Gammy rationalized that wine was on her diet and helped me with a chilled bottle of Chablis.

  • 2 filets Cod fish

  • 1/2 Fresh Lemon Juiced
  • 16-20 fresh string beans
  • 1/4 medium onion cut into thin strips
  • 2 cloves garlic chopped
  • 2 small potatoes
  • 2 pinches dried dill weed or dried basil or parsley
