Weeknight Chicken Dinner-quick and easy-gluten free- Mediterranean diet
Another quick and easy one! You and your gang will be sitting down to enjoy it in no time. And, just one skillet to clean up!
Ingredients
- olive oil
- 2-3 thin slices of boneless skinless chicken breasts
- salt and pepper
- garlic powder
- 1 small bag of cleaned snow peas (6-8 ounces) – or peas or lima beans or asparagus
- 2-3 cloves fresh garlic
- 2 small – medium size sweet potatoes – or white
Here’s how to easily throw together your Weeknight Chicken Dinner
First the chicken. We got these already trimmed and sliced thin breasts at the local grocery store and they worked out perfect.
Put a skillet on at medium high and eyeball a couple of tablespoons of olive oil in it. Salt, pepper and garlic powder one side of the chicken filets and put them in the skillet seasoned side down. Then salt, pepper and garlic powder the up side.
Give them just 2-4 minutes a side depending on how thick they are. When the juices run clear and/or they are firm to a poke, or they read 165°F on a meat thermometer remove them to a shallow dish that will catch the drippings.
Swirl a little olive oil the skillet and put in the snow peas.
We go for the cleaned and trimmed ones like these.
Salt and pepper. Plus a little chopped garlic if you want. Flip them a few times as they heat up. BTW they don’t need to do much more then heat up. Snow peas tend to get softer faster than say, green beans or broccoli.
While the snow peas were cooking I nuked a couple of small sweet potatoes in the microwave.
When the snow peas have just started to get soft push them out to the sides of the skillet and put the chicken fillets and the drippings back in the skillet. Just about 30 seconds a side to heat them back up a little.
Serve up and enjoy your 25 Minute Weeknight Chicken Dinner. Bon Appetit! We had a nice, smooth California Chardonnay and some of Poppop’s no knead bread with ours.
