Turkey Dressing Poppop’s way
Not to brag, but, my family and friends have all told me that I make great Turkey Dressing. So, to all that have asked for the recipe,,,,here it is!

Set the oven at 350. Put your biggest sauté pan on at a little higher than medium . Cut up a pound of bacon as in the pic. Don’t pull the slices apart just lay it out and cut off about 1/8″ off at a time. Put the bacon in the pan and let’s start on the sausage.
Slit open a 1lb. tube of plain breakfast sausage.
Then slice and chop up the sausage a bit.
Add the sausage the pan and break up the pieces as best you can. As they cook they get easier to break up.
Chop up the liver and add it to the pan.
With a sharp knife remove the sinew from the outside of the gizzard and the heart.
Chop up the meaty part that is left, add it to the pan and mix everything up real good.
Chop up a large onion and five or six cloves of garlic. Push the meat out to the edges of the pan and add the veggies to the bare spot in the middle. Spread them out and let them cook for about two minutes then mix it all together. The veggies are going to continue to cook as your dressing cooks.
Now ya gotta try to remember that old Simon and Garfunkel song. Add 3 tbsp. each of dried “parsley, sage, rosemary and thyme”. No salt because there is already some in the bacon and sausage.
Mix it all together and let it cook for about 15 minutes more, stirring often. If it looks too dry swirl a little olive oil in.
Put the two loaves of bread in a big bowl and tear them up by hand. Dump the potion from the pan into the bowl on top of the bread.,
Add about 1 cup of cold water.
and squish it all together breaking up any larger chunks of bread as you encounter them. You might need to add more water if it feels too solid. It needs to be squishy but not runny.
Spray a deep baking dish with oil and add the dressing. Cover and put it in the oven with the turkey for an hour. Remove the cover and poke you finger in the center. If it’s hot remove the cover and bake for another 10-15 minutes. What if your turkey still has a ways to go and your dressing is done you can always put it back in the oven for the last 10 minutes or so of turkey time to have it hot for serving.

- 2 large loaves sliced sandwich bread
- 1 cupp cold water and more if needed
