Slow Cooker Roast chicken. Well, the cooking is slow but the work is quick and easy. You will find that throwing it together in the morning is very quick and easy and serving it up at suppertime is a breeze.

Take the gizzards out and put them in the slow cooker. You will get a better gravy because of it. Rinse the chicken inside and out. Salt and pepper inside and out. Crush three or four cloves of garlic. You don’t have to peel them or chop them just crush them and put them in the cavity. Slice four thin slices from the lemon and sneak them under the skin on the breast. Cut the rest of the lemon in half and put it inside the bird. Put the chicken in the slow cooker. Cut a couple of potatoes and a few carrots into big chunks and toss them in with the chicken.

You don’t need to add any water because the moisture from the chicken and the veggies are going to give you some great drippings that you could thicken up with some flour or corn starch for a nice gravy.

Set the slow cooker for eight hours slow or four hours fast. Slow cookers vary so you probably already have a feel for whether or not to mess with the times to have it ready when you want it to be.

When it’s done you can just move the chicken and the veggies to a roasting pan and cut the bird into the portions that you want.  If you want some good gravy just whisk together some four or corn starch with a little water and then whisk it into the drippings.
