Shrimp Broccoli Stir Fried Rice
You will make this meal faster and better than your favorite Chinese delivery or take out. Your Shrimp Broccoli Stir Fried Rice meal will be on the table in twenty minutes and real good.
If your shrimp is frozen put them in a bowl of water and they will be ready when it’s time to add them to the skillet. If you don’t have any leftover rice in the freezer put a pot of water on and add the salt. I use “minute rice” for a quick meal like this one but regular rice works fine just give it about a 10 minute head start.
Put a skillet on at medium high and eyeball enough olive oil to coat the bottom about 1/8″ deep. If your broccoli is frozen just microwave them for a minute. Chop up the garlic and cut the larger broccoli florets in half through the stems.
Put the broccoli in the pan and salt and pepper it. Toss a few times as they cook. When the water boils add the rice. Let it come back to a boil, lower the heat to a simmer and put a lid on it. When the broccoli starts to singe on the edges – about 3-4 minutes – add the garlic. Squeeze some lemon juice on the garlic and toss it all together.
Now for the Shrimp
Toss a few more times as the garlic cooks a little. Just about 1 minute. Push the broccoli and garlic to the outside of the pan and lay the shrimp out flat on the bottom the skillet.
Cook them just about a minute to a minute and a half each side. When they are pink on the outside and white in the middle they are done.
The rice should be done by now so add it to the skillet. Toss or stir to get it all mixed together. If the rice isn’t done yet just lower the heat on the skillet to medium low and toss occasionally ’til the rice catches up.
