Shellfish Marinara

 


This Shellfish Marinara was so good and so easy. 

Ingredients

2 servings

  • olive oil
  • 6 large shrimp peeled and deveined
  • 6 mussels
  • 8 small scallops – shelled – or 6 medium size – or 4 large
  • 1 1/2 cups marinara sauce
  • 1  lemon
  • 1 tbsp. dried basil or 2 tbsp. chopped fresh

Directions for your Shellfish Marinara

 

If your shrimp, mussels and scallops are frozen put them a bowl with enough water to cover them. Plus squeeze in the juice from a wedge or two of lemon. And add the lemon rinds in with the shellfish.

 

 Put a skillet on the stove at medium and drizzle in just enough olive oil to barely cover the bottom. When the shellfish have softened a little take them out of the water, (remove the shrimp shells if necessary) and add them to the skillet. Plus the marinara sauce, the lemon wedges and the basil. bring it all up to a simmer.

 

 

When the shrimp are pink on the outside and white in the middle and the scallops are white and firm. Serve up and enjoy your Shellfish Marinara. I multi tasked and put together potato fritters and topped them with some of the marinara sauce when I got them on the plate.
