Have your shrimp thawed, peeled, deveined and ready to go. I buy deveined, wild caught shrimp and just let them thaw in a bowl of water for a few minutes or in the microwave is even faster.
Put a skillet on at medium and put the butter in it. Chop up the garlic and parsley and add them to the pan. Lightly salt and pepper. Squeeze the lemon juice in and add the rind into the pan. Spread the shrimp out so they all lay flat and cook for just about a minute to a minute and a half each side.
Spoon the liquid over the shrimp as they cook. When the middle of the shrimp is opaque they are ready to go.
Serve them up your sautéed shrimp with some Spaghetti Aglio e olio or some risotto or some Italian Mozzarella rice. Top off with some grated parmesan. Bon Appetito!
