A Good friend of mine has a wonderful daughter named Shelly. Shelly’s husband, Tony, is real good man and very very good on the grill and also this is the way he prepares Fried Catfish. He keeps it simple. I’m going to quote him here.
“Jack my catfish recipe is an old recipe that the country folks used for generations. It is pretty simple. In a large bowl put your fish in and add maybe a cup of water. Add lots of garlic powder and salt. Stir until it gets sticky, For your batter every cup of corn meal put 1/4 cup of flour. Season with lots of garlic powder and salt. Your catfish will be sticky and the batter will stick. Fry ’till golden brown. This recipe is how country folks cooked fish for many generations, it is the best!”
Rinse off the filets and cut them into the size you want.

We went with two tbsp. salt and two tbsp. garlic powder.

We put one tbsp. each of garlic powder and salt in with the corn meal and flour. Coat the filets with the corn meal mixture, patting the filets into it to get them well coated.
“Fry ’till golden brown.”
When they are a golden brown put them on a dish lined with paper towels and let them drain a bit.

Serve it up with some tarter sauce, a wedge of lemon and the veggie du jour, While you have the hot oil french fried potatoes go great!

Ingredients
- 2 1/2 cups vegetable oil
- 1 large catfish filet or 2 medium sized or 4 small
- 1 cup water
- 3 tbsp. salt
- 3 tbsp. garlic powder
- 2 cups corn meal
- 1/2 cup flour

For just Gammy and Poppop we used 2 tbsp. each of salt and garlic powder in the water and 1 tbsp. each in the cornmeal/flour mixture.
