Quick Salmon Dinner
For your Quick Salmon Dinner Just put the butter in the skillet, rub the salmon filets with the “rub” and pan fry ’em.
We had some leftover baked potatoes so we had them as hash browns with onions and did some quick and easy sautéed spinach .
So I multi-tasked and everything was ready in 25 minutes. If this old poppop can do it anybody can.
Here are the Recipes
Cut up the onion and the garlic and cut the potatoes in half lengthwise. Have your baby spinach standing by. It cooks so fast that you will add it to it’s skillet only after the salmon and the potatoes are ready.
These amounts are for 2 servings. If you want different servings amounts scroll down to the recipe card that is below this posting. There you can change the number of servings and it will change all of the amounts of the ingredients to what is needed for the number of servings that you have chosen. Also you can switch the amounts to metric.
For the Salmon
- 1 Tbsp. Powdered Garlic
- 1 Teaspoon Dried Basil
- Salt and Pepper
- 2 appx. 6oz. salmon filets
- 2 tablespoon butter
Mix the powdered garlic, dried basil, salt and pepper together.
About the Salmon dry “rub”, you could use any dry ingredients that YOU prefer. Like paprika, lemon pepper, dried sage and on and on. Even some lemon zest would work well.Gently rub the fillets with the “rub”.
Put the skillet for the salmon on at medium high and add the butter when the butter has stopped foaming put in the salmon filets. Cook them for about 2 to 5 minutes a side depending on how thick they are and how done that YOU like them. I test it for doneness with a table fork. Insert the fork just about a quarter inch. Gently twist it and if the salmon wants to flake apart it is ready. When the salmon is done turn the heat for it’s skillet off, but, leave the filets in the pan.
For the Potatoes
- Olive oil
- !/2 medium size onion cut into strips or coarsely chopped
- 2 small or 1 large leftover baked potato or just zap a fresh one in the microwave
- Salt and pepper.
Put a skillet on at medium high with a couple of tablespoons of olive oil. Like Rachael Ray says “Just eyeball it”. Spread out the onions and lightly sprinkle with salt and pepper. Cut the potatoes in half lengthwise and lay the potatoes out on the onions and squash them down. Don’t turn the potatoes over. Just leave them “face down” in the pan.
For the Spinach
- extra virgin olive oil
- 6 cloves garlic – sliced or coarsely chopped
- 2 LARGE handfuls pre washed spinach
- Salt and pepper
- 1 pinch Red Pepper flakes (optional)
Put another skillet on at low and enough good extra virgin olive oil to cover the bottom. Add the garlic and spread it out so that it is all lying flat. Sprinkle a little salt, black pepper and red pepper flakes (optional on the red flakes).
Add the spinach to the garlicky skillet and toss it with a pancake kinda flipper until it is as softened up as YOU like it. It really only takes a matter of seconds before it is wilted so watch and flip. Don’t let it get soggy.
Then serve up and enjoy your Quick Salmon Dinner with a wedge of lemon for the salmon and the spinach.
