Quick Easy Shrimp Dinner

Here are the ingredients for your Quick Easy Shrimp Dinner
These amounts are for 2 servings. If you want different servings amounts scroll down to the recipe card that is below this posting. There you can change the number of servings and it will change all of the amounts of all the ingredients. Also you can switch all of the amounts to metric.
- 12 jumbo or extra large shrimp -peeled and deveined
- olive oil
- 2 medium size sweet potatoes or 1 large one halved after cooking
- 3 cups baby carrots
- salt
- 1/4 stick butter plus 2 pads for serving the potatoes
- 1 Tbsp.dried parsley flakes or 2 Tbsp. chopped fresh parsley
- 2 lemon wedges -for serving
And here is how to cook up your Quick Easy shrimp Dinner
Put the carrots in a pot of water, add a pinch of salt and put it on the stove at medium high.
Put the potatoes in a bowl in the microwave and zap ’em for about five minutes or until they are soft to a squeeze. We went with sweet potatoes tonight because,,well,,that’s what Gammy wanted.
When the carrots are as soft to a poke with a fork as YOU want them to be drain all but tiny bit of the water of and add the butter and the parsley. Mix it up getting the carrots all covered and put it on the smallest burner at very low. Mix them up a couple of times as you go about your shrimp duties.
Check the potatoes to see if they need a little more zapping and if so zap ’em.
Put a skillet on at medium high and swirl in about 2 tablespoons of olive oil. Let it heat up and then lay the shrimp out flat on the bottom of the skillet.
Just give them about one to one and a half minutes a side or until the outside is pink and the middle is opaque.
Then go ahead and enjoy your Quick Easy Shrimp dinner.Now, Wasn’t that easy!?

Quick EasyShrimp Dinner - Gluten Free - Paleo Freindly
Ingredients
- 12 extra large or Jumbo Shrimp peeled and deveined
- 2 medium size sweet potatoes or 1 large one halved just before serving
- 3 cups baby carrots
- salt
- 1/4 stick butter plus some pads for serving the potatoes
- 1 tbsp. dried parsley flakes or 2 tbsp.chopped fresh
- 2 lemon wedges for serving
Instructions
- We suggest keeping some peeled and deveined frozen shrimp in the freezer. Just put as many as you need in a bowl of water and let them thaw as you get the veggies going. If you are working with fresh shrimp just peel and devein them as the carrots are cooking.
- I'll bet that you have some baby carrots in the fridge so put some in a pot of water, add a pinch of salt and put it on the stove at medium high.
