I have a weeknight Catfish shortcut for you.
If you like catfish but kinda cringe at the thought of heating up a pot of oil to deep fat fry them in after you do the breading process with the flour and the beat up eggs and the bread crumbs. This is a quick and easy, no breading, no deep fat frying but still a real good catfish dinner.
Ingredients
These amounts are for 2 servings
- 2 small to medium size potatoes – cut into french fry shapes
- 2 small catfish filets
- 1/2 lemon
- salt and black pepper
- 2 tsp. dried dill weed or basil or parsley
Directions
Put the catfish fillets in a bowl and squeeze the juice from a half of a lemon in. Lightly salt and pepper both sides and let them sit while you get the skillet and the french fries going. You could add some more stuff to the catfish to jazz up the flavor if you like. We also add some dill weed, dried basil and lemon pepper. But just the salt, pepper and the lemon juice do a great job.
French fries always go good with the catfish so put a skillet on at medium high and add just enough olive oil – not canola or mazola – to cover the bottom of the skillet about 1/8″ deep.
Cut up the potatoes into the french fry shapes and add them to the skillet.
The catfish cooks real fast so when the fries are just about done the way that you like them push them off to the sides of the skillet and carefully slip in the catfish fillets.
The fillets just take about a minute to a minute and a half a side depending on the thickness. Avoid real big filets and opt for small one serving size filets to make the cook time less.
When they are done – poke one with your finger and you can tell – put everything on some paper towels to drain off a little.
Then serve up and enjoy your quick and easy catfish dinner.
That’s a dab of Chili sauce on the side jazzed up with a little horseradish for dipping .
