These Parmesan Smashed Potatoes turned out great. I saw this recipe in a cookbook by Giada De Laurentis called Everyday Italian, that my wife (Judy) got me. Our grandkids call my wife Gammy and me Poppop. And, that’s why we named the blog “Poppop cooks”. We really liked these Parmesan Smashed Potatoes and we will have them again and again. 


Here is what you will need

These amounts are for 2 servings. If you want different servings amounts scroll down to the recipe card that is below this posting. There you can change the number of servings and it will change the amounts of all the ingredients. Also you can switch the applicable amounts to metric.

  • 2 medium sized potatoes
  • 1/2 teaspoon salt
  • 3 tablespoons butter
  • 1/2 cup grated parmesan cheese

And here is how to easily throw together your Parmesan Smashed Potatoes

Leave the skin on the potatoes and clean them off under running water. Your scrub daddy will work great for the potato cleaning. Cut them up into about 3/4 inch chunks. Cook them on the stove in a pot with enough water to cover them by about an inch to an inch and a half. Add the salt and when they are soft to a poke with fork drain off the water. Crush the potatoes  with a whisk or a potato masher or just a fork. Add the butter and the parmesan cheese. mix it all together

Put skillet on at medium high and add just enough olive oil to coat the bottom.

Divide the Parmesan Smashed Potatoes into serving sized portions and add them to the skillet. Flatten them out a little. Give them about 2-3 minutes each side. The added flavors of the parmesan cheese and the butter really turned the potatoes into something VERY tasty and nice.
