Pan Seared Shrimp with Lemon and Garlic
Your whole Pan Seared Shrimp meal, including the potatoes and broccoli, will be ready in 20 minutes or less. And,,Gammy said it’s the best shrimp that I have ever made for her. And, if I say so myself, It did turn out real good.
Ingredients
- 2 medium size potatoes
- 2 and 1/2 cups broccoli florets
- olive oil
- 12-16 large shrimp peeled and deveined
- salt and pepper
- 1/2 fresh lemon
- 4 cloves garlic – chopped
Let’s get it going!
Put the potatoes in the microwave and set it for three minutes.
Put the shrimp and the chopped garlic in a bowl and squeeze in the lemon juice. Lightly sprinkle with salt and pepper and gently stir it all together.
Put a skillet on at medium high and add just enough olive oil to coat the bottom.
Put the broccoli in the microwave with the potatoes and zap ’em for another 3-4 minutes.
Now, about the shrimp. You could go with the shells left on or peeled and deveined but the tails left on. We like them like this, peeled, deveined and tails off so that they can just be scarfed up without any chores or fanfare.
Put the shrimp, garlic and lemon juice in the skillet and spread the shrimp out so that they are all lying flat.
Sear them for a minute to a minute and a half or until they are pink and starting to curl up.
Turn them over and sear the other side. When they are pink and seared on the outside and white in the middle they are ready.
Serve them with a wedge of lemon and a good dry white wine like Gammy’s favorite – Santa Margarita Pinot Grigio.
