Pan Seared Shrimp with Lemon and Garlic -

Ingredients
  

  • 2 medium size potatoes
  • 2 and 1/2 cups fresh broccoli florets or frozen
  • olive oil
  • 12-16 large or jumbo shrimp peeled and deveined
  • salt and pepper
  • 1/2 fresh lemon
  • 4 cloves fresh garlic chopped

Instructions
 

  • Put the potatoes in the microwave and set it for three minutes.
  • Put the shrimp and the chopped garlic in a bowl and squeeze in the lemon juice. LIGHTLY sprinkle with salt and pepper and gently stir it all together. Put a skillet on at medium high and add just enough olive oil to coat the bottom.
  • Put the broccoli in the microwave with the potatoes. Stack the bowls on top of each other if necessary and zap 'em for another 3-4 minutes.
  • Put the shrimp, garlic and lemon juice in the skillet and spread the shrimp out so that they are all lying flat. Sear them for a minute to a minute and a half until they are pink and starting to curl up. Turn them over and sear the other side.
  • Serve them with a wedge of lemon and a good dry white wine like Gammy's favorite - Santa Margarita Pinot Grigio. Now,,wasn't that easy? You will really like it!
