One Skillet Chicken Pasta Dinner
This One Skillet Chicken Pasta Dinner is a VERY quick and easy weeknight dinner. Chicken, pasta and veggies are all cooked in one skillet and done in a jiffy. AND the best part,,It was delicious.

The ingredients needed
2 servings – The number of servings can be changed in the recipe card found below this post. Changing the amount of servings on the recipe card will automatically change the amounts of the ingredients.
- 1 tbsp. olive oil
- 1/2 tbsp. butter
- 2 small boneless skinless chicken breasts or 1 large sliced in half horizontally or 1 thigh
- salt and pepper to taste
- 2 cups cheese tortellini
- 1 large roma tomato seeded and chopped
- 3 cloves garlic chopped
- 2 tbsp. grated parmesan cheese
Here is how to quickly put your One Skillet Chicken Pasta Dinner together
Put your skillet on at medium high and add a little olive oil and butter.
Cut a boneless skinless breast or thigh into about 3/8″ to 1/2″ cubes. Add the chicken to the skillet and sprinkle with a little salt and pepper. Toss it a few times as it cooks. When it is about half way done and just starting to brown up on the edges put the tortellini into the skillet.
While the chicken is cooking cut the tomato in half lengthwise. Cut off the stem and with a teaspoon remove the seeds from the middle. Chop up the tomato and the garlic. The chicken is done (about 6 – 8 minutes) lower the heat to medium and add the chopped garlic and tomato. Toss it all a few times as the garlic and tomato cook. Sprinkle some grated parmesan cheese on it and toss it all together.
