One Skillet Chicken Dinner with Peppers and Onions – Quick and Easy

This One Skillet Chicken Dinner with Peppers and Onions is a nice twist on the old traditional Italian Sausage and Peppers dinner

This time you will be making your whole meal in one skillet and in less than 30 minutes.

We highly recommend using a meat thermometer. Especially when cooking chicken. 

Ingredients

These amounts are for 2 servings. To change the amounts go to the recipe card at the bottom of this post and there you can change the amounts of servings and all of the recipe amounts will be changed.

  • olive oil
  • 4-6 chicken tenders depending on the size and your appetite. Or, 1-2 chicken breasts cut into strips
  • 2 medium potatoes
  • salt and pepper to taste 
  • 1 red bell pepper cut into strips
  • 1/2 medium onion cut into wide strips
  • 3-4 cloves of garlic chopped
  • grated parmesan cheese

 

One Skillet Chicken Dinner How To

 

First put your skillet on at medium high with just enough olive oil to coat the bottom. Cut up the potatoes and put chicken tenders (or strips) and the potatoes in the skillet. Sprinkle with salt and pepper.

Stir the potatoes a few times as the chicken cooks. While the chicken and the potatoes are cooking cut up the pepper, onion and the garlic.

When the first side of the chicken has cooked turn them over and add the rest of the veggies. Shake a little salt and pepper on the veggies.

Stir everything a few times as it all cooks. And when chicken has reached 165°F on a meat thermometer put it all on the dinner plates. Top it with some grated parmesan cheese (and chopped basil or parsley if you want to). Bon Appetito!!
