Lemon Zested Cod Filets
Lemon Zested Cod Filets is a real good seafood recipe. It’s easy to prepare and it tastes great. AND very easy clean up.

Here is what you will need
- Cod Filets – appx. 6-8 ounces per serving
- 1/2 stick butter
- 1 cup crushed crackers – or bread crumbs
- salt and black pepper
- 1/2 tsp garlic powder
- 1 lemon – zested
- 1/2 cup dried parsley flakes or 1 cup chopped fresh leaves
Now the quick and easy directions
Set the oven at 400°F/204°C. If your cod filets have to be thawed out just put them in a bowl of water while you prep the butter and the breading. They will be ready for you when you are ready for them. Put the butter in a dish, in the microwave to melt while you get the breading ready.
For the breading put the crackers of your choice in a plastic zip lock bag and mash ’em into crumbs with a rolling pin or a sauce pan. You can use bread crumbs or any crackers from cheez-its to saltines and anything in between. Even gluten free if needed.
Put the crumbs in a shallow dish. Add the salt, pepper and garlic powder. Zest the lemon right into the dish. Add the parsley then stir it all up.
Line a cookie sheet or baking pan with aluminum foil and spray or coat it with olive oil. Dip the filets in the butter then the breading. Press and turn the filets in the breading to get them coated all over then put them into the baking pan.
Into the oven for 10 – 14 minutes depending on the thickness of the filets. When they are getting firm and want to flake if poked with a fork they are done. Serve them up and Bon Appetit!
