This Gluten Free Pineapple Meatloaf recipe is for our friend Mai.
This is Gammy’s (that’s what our grandkids have named her) family recipe for Gluten Free Pineapple Meatloaf. When we lived in Mexico, in a real nice little town called Chapala, Gammy and I were members of the local American Legion chapter and they had varied cooking contests. Chili cookoffs, etc. Well there came along a Meatloaf Contest and Judy Kelly, aka Gammy, won it with her grandma’s Pineapple Meatloaf and here is the recipe for you.

Here are the ingredients for your Gluten Free Pineapple Meatloaf
- 1 egg – beaten
- 1/2 cup quick oats
- 1/2 medium sized onion finely chopped
- 1/2 bell pepper finely chopped
- 1/4 teaspoon salt
- 1 lb. lean ground beef
- 1 cup crushed pineapple drained
The number of servings can be changed in the recipe card found below this post. Changing the amount of servings on the recipe card will automatically change the amounts of the ingredients.
And here is how to make your Gluten Free Pineapple Meatloaf
Pre heat the oven to 350°F/176°C. In a mixing bowl big enough to handle all of the ingredients, plus some room for mixing, whisk the egg. Add the oats, onion, bell pepper, and salt. Mix it all together.
Then add the beef and the pineapple and thoroughly mix everything together. Spray oil a 9″x 5″ loaf pan, add the mixture and pat it down.
Bake for 35 to 40 minutes. It should be 155-160°F/71°C on a meat thermometer. Slice it up and top with the gravy or sauce of your choice. We went with our our Marinara Sauce tonight, but, you can use any topping you want. Gammy says that her grandma would use BBQ sauce or sometimes a can of Cambells’s cream of mushroom soup, not diluted, just right out of the can and heated up.
