Flounder with Lemon Butter Sauce. This classic flounder dish is simple to make and it is delicious.

  • olive oil
  • 1 tablespoon butter
  • 2 lemons – 1 lemon for the marinade –  1 /2 lemon for the skillet and 1/2 lemon for serving 
  • 2 tablespoons white wine (optional)
  • salt and pepper to taste
  • 4 small flounder fillets – or 2 larger ones
  • 2 tablespoon chopped fresh parsley or 1/2 tablespoon dried – for garnishing the dish before serving – optional

Put the flounder fillets in bowl and add the juice and the peel from  1/2 of a lemon.

Put a skillet on at medium low and add the butter, lemon, salt, pepper and the white wine. Optional on the wine.

When the butter has melted whisk everything together and let it heat up.

When the liquids in the skillet have warmed up lay out the fillets in the skillet.

The flounder fillets will cook real fast so just about 1 – 2 minutes a side depending on the thickness. To check and see if they are done just gently poke one with a table fork and gently twist it just a little and if the flounder wants to flake apart they are ready to serve.
