Fast Shrimp Dinner

Here are the ingredients for your Fast Shrimp Dinner
For 2 servings
- Olive oil
- 1 Big handful green beans – rinsed and trimmed
- 1/2 medium size fresh onion cut into wide strips
- salt and papper
- 12 large shrimp – peeled and deveined
- 1/4 fresh lemon
- 3-4 cloves garlic – chopped
- 2 cups rigatoni pasta – or any pasta that you prefer
And here is how to make your Fast Shrimp Dinner
If you are using frozen shrimp put them in a bowl of water to thaw while you get the skillet started. Put a large skillet on at medium high and eyeball a couple of tablespoons of olive oil in it.
Now rinse off and trim the green beans. Or just get the ones in a plastic bag that are already trimmed and washed. Put the beans in the skillet and cut up the onion into wide strips and add it to the pan also.
Toss it all a few times as it cooks. And chop up 3 or 4 cloves of garlic.
If you have to peel and devein the shrimp get to it. Or you could buy them already peeled and deveined to make it even quicker and easier.
For the carb tonight I cooked up some pasta while the rest of the Fast Shrimp Dinner was getting ready. If the pasta is done before the stuff in the skillet just drain the water out and drizzle it with a little olive oil and stir it up to get it coated with the olive oil and put it back on the burner but with the heat turned off. Or you could soften – not completely cook – some potatoes in the microwave then cut them up and add then to the skillet. Or put some instant rice or gnocchi in the skillet when you put the beans and onions in and it would be done when everything else is.
When the onions are starting to get translucent push the veggies off to the sides of the skillet and put the garlic in the bare spot in the middle. Squeeze the juice from the fresh lemon on the pile of garlic and flatten it out.
Now the shrimp
Lay the shrimp out on the garlic and cook for about a minute to a minute and a half until the cooked side is pink.
Then turn them over and when both sides are pink and the center is opaque the shrimp are done.

20 Minute Weeknight Shrimp Dinner - Quick and Easy
