Chicken Fillets with Roasted Red Peppers

It sounds good doesn’t it? Chicken Fillets with Roasted Red Peppers and Basil? Well, we really like it and I bet that you will too. We like Roasted Red Peppers and always keep some in the fridge. There are a few different ways to make your own. Here’s our recipe for Roasted Red Peppers. If you don’t want to go to the trouble you can get them in cans or jars in your grocery store. Their flavor goes real well with chicken. Especially when you add some basil and some red wine (or chicken broth) to the mix.
Here’s what you will need
These amounts are for 4 servings. If you want different servings amounts scroll down to the recipe card that is below this posting. There you can change the number of servings and it will change all of the amounts of all the ingredients. Also you can switch the amounts to metric.
- Olive oil
- 4 thin chicken fillets
- salt and black pepper to taste
- 8 – 12 slices of roasted red peppers
- 1 cup of fresh basil leaves coarsely chopped or 1 level tablespoon dried basil
- ! cup red wine (or chicken broth)
And here is how to make your Chicken Fillets with Roasted Red Peppers
Put a skillet on the stove at medium high and eyeball just enough olive oil to cover the bottom. Salt and pepper the fillets and add them to the skillet. About two to four minutes a side depending on their thickness. when they are firm to finger poke and the juices are running clear or the best way is to check them with an instant read meat thermometer. When they read 165°F they are done. Put them aside in a dish that will catch the drippings.
While the chicken is cooking coarsely chop the basil, if you are using fresh basil. Also if your red peppers need to be cut into smaller sizes get that done also.
Add the basil ,the wine (or broth) and the peppers to the skillet.
When the wine starts to simmer put the chicken and the drippings into the skillet.
Turn them over a few times as the wine reduces and they warm back up so that they get the flavors from the wine, peppers and basil.
