But tonight we did our Cheeseburgers in Paradise as a quick and easy weeknight dinner – done on the stove. For the veggies set the oven at 400°.  Like Jimmy Buffet said. “Heaven on Earth with an Onion Slice”. Just peel and slice a large sweet potato and don’t peel just slice a large zucchini in to about 3/8 inch thick slices. Spray or rub a baking sheet with olive oil and spread out you veggies. Salt and pepper them. Toss them a little with your hands and salt and pepper them again. Then into the oven it goes.

Put a skillet on at medium high and add enough olive oil to barely coat the bottom. You could just go with good chopped beef or you could also add some of your favorite things to jazz up your Cheeseburgers in Paradise. We like adding some garlic powder, grated parmesan cheese, dried basil, salt and pepper. But, you know how your gang likes them so you do it your way. Mix all the extra ingredients in  with the beef with your hands and form them into whatever size burgers you want.

Cut the onion into wide strips and put the burgers and onions into the skillet with the onions surrounding the burgers so they get access to the bottom of the pan.

When the Cheeseburgers in Paradise are cooked on one side the way you want them – one and a half to three minutes a side depending on the thickness and how rare or well done that you want them done, stir the onions up as the burgers cook. After you turn them over put your cheese of choice on the burgers and it will melt while the burger finishes cooking.

Your veggies will be done by now so serve it all up!! We like some sliced tomatoes with ours.

Ingredients

  • olive oil
