Butter Cheese Chicken Filets

Butter Cheese Chicken Filets

We had our Butter Cheese Chicken Filets on a weeknight when we wanted it to be quick and easy but we still wanted a restaurant quality supper. Gammy said, “WOW this is good! Nice job Poppop”. Always nice to please Gammy and stay on her good side. Talk about quick and easy I made some Sautéed Spinach in another skillet and some sweet potato fries in the air fryer while the chicken was getting jazzed up.

  • Olive oil

  • 2 boneless skinless chicken filets
  • salt and pepper
  • garlic powder
  • Grated parmesan cheese
  • 1/2 cup chopped fresh basil or 1/4 cup dried

And here is how to cook up your Butter Cheese Chicken Filets

Put a skillet on at medium high. Add just enough olive oil to cover the bottom. Add 1 tablespoon of the butter.

Salt, pepper and garlic powder the chicken filets. When the butter has stopped foaming cook the filets in the skillet. About 3-5 minutes a side depending on their thickness.

When they are firm to a poke or read 165°F on a meat thermometer remove them to a dish that will catch the drippings.

Put the rest of the butter in the skillet and when it has melted add the grated parmesan cheese.

Stir the cheese as you scrape the bottom of the pan with a wooden spoon to loosen up the bits left by the chicken.

When the cheese has started to melt bring the chicken back to the pan.

Let the basil wilt just a little. After you lay the filets on the plates be sure to spoon the butter, cheese and basil mixture on to the filets. Then serve ’em up! Gammy says that she knows you will like them. We sure did.  They turned out great!
