Baked Pork Tenderloin Dinner
This Baked Pork Tenderloin Dinner is the whole meal in a sheet pan or roasting pan. And the time in the oven is only 20 – 25 minutes. And it is good. We made a big batch for Gammy’s church group and it went over great. No leftovers.
Ingredients
These amounts are for 4 servings
- olive oil
- 1 large white potato
- 1 large sweet potato
- 4 cloves garlic
- 1 tablespoon salt
- 1 tablespoon black pepper
- About 2 lbs. pork tenderloin.
- 1 large lemon
- 2 big handfuls of cleaned baby spinach
Here’s how to throw together your Baked Pork Tenderloin Dinner
Set your oven at 375°.
Into the pan drizzle just enough olive oil to coat the bottom.
If you are using white or red potatoes just rinse them off and slice them into about 3/16 – 1/4 inch slices. If you are using other kinds like Idahos peel them first. Peel the sweet potatoes and slice them into about 3/16 – 1/4 inch slices. Lay the potato slices out in the pan. Lightly sprinkle salt and pepper on the potatoes.
If necessary slice the silver skin (the fat) off the outside of the pork tenderloin. Then slice it into about 1/4 inch slices. Lay them out in the pan on top of the potatoes. Chop up the garlic and spread it all over everything.
Slice the lemon into very thin slices and spread the slices out on top of everything.
With a pancake flipper toss everything together and put it in the oven.
In about 10 minutes toss it all again. Then at 20 minutes toss it all again and check on the white potatoes. If they are soft enough to serve add the spinach and toss it all together getting the spinach wilted. If the potatoes are still too firm to serve hold off on the spinach and toss it all. After another 10 minutes it will all be ready. Then add the spinach and toss it all together and now it’s ready to serve.
You could also do it with chicken or ground beef.
