Baked Cod Filets – One Pan – Gluten Free – Paleo

Baked Cod Filets 

This Baked Cod Filets dinner is everything cooked in one sheet pan – on the table in 30 minutes or less – Gluten Free – Paleo friendly.


Just put this meal together on the baking sheet and put it in the oven. You can do some catch up around the house while your dinner is tending to itself. Like, put a load of laundry in the washer, make the bed that you didn’t make this morning, hug the kids, get out of your work clothes or all of those things. 

Then, open a bottle of wine, sit down and enjoy this easy and delicious Baked Cod Filets weeknight dinner.

What you will need for your Baked Cod Filets

  • One large sheet pan
  • Aluminum foil (optional)
  • Olive oil
  • Sweet potatoes
  • Broccoli
  • Grated parmesan cheese
  • GarlicPowder
  • Salt and pepper
  • Bread crumbs ( or almond flour for paleo and gluten free)
  • Dried paprika
  • Basil leaves (fresh or dried)
  • Fresh lemon (s)

The quick and easy How To

 

First, set the oven at 400.

Put all of the dry ingredients in a bowl and whisk them together. We went with almond flour, to keep it gluten free and Paleo for Gammy. And, paprika, lemon zest, chopped basil leaves, grated parmesan cheese, salt and pepper.

Another choice would be to just let your imagination run wild and use whatever you want and have on hand for the dry ingredients.

Spray the baking sheet with olive oil. Or line it with aluminum foil before you spray to make the cleanup even easier.

Put your veggies in the sheet. We opted for sweet potatoes and broccoli but you could use just about any combo. Just don’t use veggies that are going to cook real fast like peas or canned corn. Stick with more solid stuff like broccoli, string beans or asparagus.

Place the veggies on the pan. Drizzle with olive oil then sprinkle with grated parmesan cheese, garlic powder salt and pepper.

Melt the butter in a bowl in the microwave and set up your assembly line. The fillets go in the butter first. Turn them over in the butter to get them coated. Next roll them in the dry ingredients and place them on the baking sheet.

Into the oven for about ten or fifteen minutes. Your dinner will be ready when the potatoes are easy to poke with a fork and the cod wants to flake apart when you poke it with a fork.

This one pan dinner tastes great and it is easy to cook.

Baked Cod Filets

Ingredients

  • 4 small cod filets 0r 2 large
  • 2 medium sweet potatoes cut into large french fry shapes
  • 3 cups broccoli florets frozen is ok
  • olive oil
  • 1/2 cup grated parmesan cheese divided - sprinkling for the veggies and the rest for the cod filet rub
  • 1 tablespoon garlic powder
  • salt and black pepper
  • 1/2 cup almond flour or regular flour or bread crumbs
  • 1 tablespoon dried paprika
  • 1/2 cup chopped fresh basil or 1/4 cup dried
  • 1 fresh lemon zested

Instructions

  • Set the oven at 400. Spray the baking sheet with olive oil. Spread the potatoes and broccoli out on the baking sheet and drizzle with olive oil. Sprinkle with grated parmesan cheese, garlic powder, salt and pepper.
  • Put all of the remaining dry ingredients - including the lemon zest - in a bowl and whisk together. Melt the butter in the microwave. In a bowl big enough to handle the filets.
  • Create your assembly line and one at a time roll the filets in the butter then the dry ingredients. Gently pat them in the dry ingredients to get them evenly coated. Place them in the baking sheet,
  • Bake for 10 to 15 minutes. Test with a table fork and when the potatoes are easy to poke and the cod wants to flake when you poke it is all done and ready to serve.
