Baked Chicken Fillets – Parmesan Crusted with Roasted Red Peppers – Gluten Free – Paleo

Parmesan Crusted Baked Chicken Fillets are easy but you get more than the title suggests. Pre heat the oven to 350F. First put the grated parmesan cheese in a shallow dish and add salt, pepper and garlic powder and mix it together. Dredge the chicken fillets in the parmesan. Push the fillets down into the cheese to get them coated. Line a baking pan with aluminum foil. Spray it with oil. Place the fillets in the pan and put them in the oven. Give them 8-10 minutes.

When they are firm to the poke and the liquid coming out is clear or they read 165°F on a meat thermometer they are done.

Add the peppers and the cheese. You can get canned or jarred roasted red peppers in the store or you could make them and keep a supply in the fridge like we do. Here is our Roasted Red Pepper recipe. Bake them until the cheese has melted like YOU want it.

Ingredients

  • 2 chicken filets or 6-8 tenders
  • 1/2 cup grated parmasan
  • 1 pinch salt
  • 1 pinch black pepper
  • roasted red peppers enough pieces to cover the chicken
  • 1/2 cup mozzarella grated or sliced
  • 2-3 leaves chopped fresh basil or a pinch of dried for garnish
