Codfish Filet Dinner
Quick and Easy Codfish Filet Dinner – besides being quick and easy – is a really tasty and healthy seafood supper.
Ingredients
These amounts are for 2 servings. If you want different servings amounts scroll down to the recipe card that is below this posting. There you can change the number of servings and it will change all of the amounts of the ingredients to what is needed for the number of servings that you have chosen. Also you can switch the amounts to metric.
- 2 codfish filets
- 1 1/2 small lemons
- salt and pepper
- 2 pinches of dried dill weed – optional
- 1/2 stick butter
- olive oil
- 2 small potatoes or 1 medium
- 2 cups broccoli florets
- 1 small onion cut into strips – or 1/2 medium
- 6 small plum tomatoes
Here’s how to put together your Codfish Filet Dinner
If you have to thaw out your cod fish filets just put them a bowl of water and they will ready to go in about five minutes.
Then put the filets in a bowl and squeeze in the lemon juice. Don’t throw away the rind. Just toss it in the bowl. It helps with the flavor. Now lightly sprinkle some salt, pepper and whatever herb that YOU want to add to he mix. I like dill weed whenever I cook fish but, anything from garlic powder to basil to mint or anything else that YOU want to use all works okay. Or just go with salt and pepper. You’re the bass! Turn the filets over a few times to get them evenly coated with the good stuff.
Put a skillet on at medium high and eyeball enough olive oil to coat the bottom. Soften the potatoes in the microwave for about a minute and a half depending on your microwave and how many you are zapping. You just want them barely softened not fully cooked in the microwave. They are going to finish in the skillet. Cut the onion into strips. Cut the potatoes into about 3/4″ cubes. Add all of the veggies, except the tomatoes, to the skillet. Lightly sprinkle with salt and pepper. Toss them a few times as they cook.
And when the veggies have softened and browned a little,,,,
push them off to the side of the skillet and add the tomatoes. If you don’t have small plum tomatoes just cut yours up into plum tomato size pieces.
Multi task as you get started on the above and put another skillet on at medium high and add the butter. When the butter has turned brown add the filets and the lemon juice and the rind.
Cook the filets just about a minute and a half to two minutes each side. When they want to flake when you gently poke with a table fork that are ready to serve.
Then serve it all up and enjoy your Quick and Easy Codfish Filet Dinner. We had a chilled bottle of Gammy’s favorite white wine, Santa Margarita Pinot Grigio, with ours and it was a real nice dinner.
