Brown Sugar Roasted Carrots are a way to prepare carrots that my wife, aka Gammy, taught me. She learned it from her Grandma who was a fantastic country style cook. Everyone we have served them to has really liked them and just had to have the recipe. Which is real easy.

Here how to do these Brown Sugar Roasted carrots

 

Pre heat oven to 450F. Line a cookie sheet with aluminum foil. Peel and cut the ends off 12 fresh carrots. Place the carrots in the cookie sheet and drizzle them with a little olive oil. Roll them around so they get coated with the oil. Lightly salt and pepper the carrots then roll them over and salt and pepper the other side. Sprinkle some brown sugar, roll them over and sprinkle the other side. Space them out on the pan so they are not touching. Bake them until they are tender enough to eat when tested with a fork. Get them as soft or as firm as YOU want them. usually 10-15 minutes.
