Speedy Shrimp Dinner……
Your Speedy Shrimp Dinner will be done and on the table in 20 minutes and it,,is,,good! The shrimp and the gnocchi both cook so fast that it’ll be ready before you know it.
A couple of tips to get started
- Frozen broccoli florets don’t have to cleaned or cut up so they help speed things along. Peas are even faster.
- If you are using frozen shrimp just thaw them out in the microwave. It only takes a minute or 2 and get the ones that have already been peeled and deveined to make things even quicker.
Put a large skillet on at medium high. Swirl in enough olive oil to coat the bottom of the pan. Add the broccoli and the chopped garlic then squeeze some lemon juice in and toss in the rind. Sprinkle with salt and pepper. Cook for a few minutes tossing a few times during the process.
And when the broccoli just begins to wilt a little put in the shrimp and the gnocchi. Toss a few times as it all cooks together.
When the shrimp start to turn pink add the white wine.
Simmer until the wine has reduced and thickened a little – about 4-5 minutes – stirring a few times.
Then serve up and enjoy your Speedy Shrimp Dinner and the rest of that wine!
