Quick One Pan Shrimp Dinner
This Quick One Pan Shrimp Dinner is done in one skillet. Another quick, easy and very tasty one. Done in 20-25 minutes. And it is gluten free.
Today’s TiP – Double the recipe and freeze the extra
Any time you are making a dinner that freezes good, make a double batch and freeze it for a future meal. It’ll be sitting there waiting for you on one of those weeknights that you just don’t feel like cooking. Use your microwave to thaw it then reheat it!
Here is what you will need
- Olive oil
- 12 large shrimp peeled and deveined
- a small sweet potato or russet potato cut into small cubes
- 1 red or yellow bell pepper cut into strips
- 1 green bell pepper or poblano pepper cut into strips or jalapeño if your feeling a little spicy
- 1/2 large tomato or 1 roma tomato diced
- 4 cloves garlic chopped
- salt and pepper
- Grated parmesan cheese
How to cook up your Quick One Pan Shrimp Dinner
If your shrimp are frozen just put them in a bowel with enough water to cover them plus about an inch. Then when they are thawed – appx. 6-8 minutes – peel and devein them. Or just buy some that are already peeled and deveined.
Put a skillet on at medium and add enough olive oil to cover the bottom.
Peel and chop the potato into about 3/8″ cubes. Cut the peppers in half length wise. then remove the stems and the seeds. Then cut them into appx. 2 ” by 1/2″ strips. Cut the tomato into about 3/4 inch pieces. Chop up the garlic. Add the potatoes to the skillet and toss them a few times as they soften up.
The potatoes are starting to show some brown on the edges so add the peppers. Then toss everything together and toss a few more times as the peppers soften up.
Now as the peppers are just beginning to get soft push everything off to the sides of the skillet and add the garlic to the empty spot. Squeeze the lemon juice on to the garlic and add the rind to the skillet.
Now the shrimp
When the garlic starts to get a little translucent on the edges put the tomato pieces in the skillet and toss it all together. Then make another bare spot in the middle and lay out the shrimp.
And when the first side gets pink turn them over. About a minute and a half each side.
And when they are pink on both sides and opaque in the middle they are done. Now toss it all together and shake the grated parmesan cheese on top and toss it all together again.
Serve it up!! Enjoy!!
And you may have some vegetables left over. Put them in the fridge or freezer and they will be there waiting for you on a busy night.
