Baked Salmon in Foil
Baked Salmon in Foil is real good and real easy. Also, you can use your imagination when it comes to the veggies.
Starting with salmon filets. We always go with frozen, individually wrapped, wild caught salmon. Every time I go by the “fresh” seafood section at the local grocery store most of the “fresh” salmon is obviously been there for a while or it’s been “responsibly farm raised” or both.
Ingredients
These amounts are for 2 servings. You can change the number of servings by scrolling down to the recipe card below this posting. Thderfe you can change the number of servings and that will change the amounts of all of the ingredients. You can also change the applicable amounts to metric.
Like always, tonight I just went with the veggies that were on hand in the fridge.
- 2 Salmon Fillets
- salt and pepper – 1 pinch each
- 1 lemon – thinly sliced
- 1/2 small onion – cut into thin strips
- 6 asparagus spears
- 1 small tomato – sliced
- 2 cloves garlic – chopped
- 1 carrot – thinly sliced
- 10 leaves pre cleaned baby spinach
- 1 small fresh zucchini – sliced thin
- 2 tablespoons white wine
- 2 tablespoons extra virgin olive oil
And here are the recipe directions
Pre heat the oven to 400F. Lay out a piece of aluminum foil for each filet. Have the piece of foil big enough to fold over and curl together to seal the package. Spray the foil with oil and set the filet in the middle. Sprinkle a little salt, pepper and whatever else you might like on your fish. Like red pepper flakes or dill weed and on and on.
The veggies tonight are thin lemon slices first. Then thin onion slices, garlic slices, asparagus, tomatoes, spinach, zucchini. I think that’s it. No wait! Drizzle a little white wine and extra virgin olive oil. But, after the salt and pepper you can do it any way that YOU want. So don’t be turned off by all the ingredients listed. Just go with as much or as little as YOU want.
Wrap the foil and curl it all together sealing the good stuff inside. Put them on a cookie sheet and bake them for 20 minutes.
