One Sheetpan Baked Codfish Fillet Dinner
Prep Time 10 Minutes – Cook Time 15 Minutes – Total Time 25 Minutes
Think of all of the things that you could be catching up on while the dinner is all on one sheetpan and in the oven for about twenty minutes. It’s easy and it turns out real good.
Ingredients
These are for 2 servings
- 2 Thick Cod Filets
- 12 – 20 stalks fresh asparagus spears
- 2 small potatoes or 1 large
- olive oil
- salt and pepper to taste
- 4 tbsp. grated parmesan cheese
- 1 tbsp. dried dill weed – optional
- 1 fresh lemon
Directions
Set your oven at 400°F. If your cod fillets need to be thawed out put them in bowl of water. They will be ready to go in about eight minutes. Put the potatoes in the microwave for about two to two and a half minutes. Rinse the asparagus off and cut off the ugly stump ends. Cut up the potatoes into slices about 1/4″ thick. Put everything into a large bowl.
Add the olive oil, parmesan cheese, salt, pepper, lemon juice and dill weed (optional on the dill weed). Slide your hands under everything and gently toss it all to get everything coated with all of that good stuff. Line a sheetpan with aluminum foil. Spread everything out on the sheet pan. Pour any liquids left in the bowl all over it. Put it in the oven.
After fifteen minutes poke each ingredient with a table fork. They just might be soft enough and ready to serve. If not give them another five minutes. Serve up and enjoy your One Sheetpan Codfish Fillet Dinner.
