One Pan Quick Easy Shrimp Dinner…..
….Well I did it on a stove top grill tonight. You could just as easily use a big skillet or sauté pan. Or,,even on a baking sheet in the oven.
Put the grill or pan on the stove at medium high.
If you have to thaw out your shrimp just put them a bowl of water and they should be ready when the veggies are done. Pat them dry before you put them on to cook.
Rinse off your potatoes and asparagus. Cut the ugly stump ends off the asparagus and slice the potatoes into about 1/4 inch slices. Spread them out on the grill. Spray with a little olive oil and sprinkle with salt, pepper and grated parmesan cheese. Turn ’em and do the other side.
Grill until you can see the grill marks then turn them over and grill the other side. About 4-5 minutes each side. Poke them with a fork to see if they are done the way that YOU like them.
When the veggies are grilled push them off to the side and lay out the shrimp. Give them the same oil, salt, pepper and parmesan treatment. Grille them just about a minute to a minute and a half each side or until they are pink on the sides and opaque in the middle.
Then serve up your One Pan Quick Easy Shrimp Dinner with a lemon wedge and nice chilled dry white wine. We like Pinot Grigio with ours.
