Baked Lemon Chicken Filets
You will have this world class meal put together and on the table in 30 minutes or less. This Baked Lemon Chicken Filets recipe is easy. You’ll even have some spare time while it’s in the oven.
Ingredients
Set the oven at 400°F/204°C. In the interest of being quick and easy let’s slice the breasts in half horizontally. Like if you were going to butterfly them but go all the way through. Lay them out in a foil lined baking pan.
Then add all of the other ingredients and turn the chicken filets over a few times to get them well coated and all of the ingredients mixed together.
Put it in the oven and after 15 minutes check ’em. If they are firm to a finger poke or the juices are running clear or they read 165° on a meat thermometer they are good. Switch the oven from bake to broil for 1 minute.
Then serve up your Baked Lemon Chicken Filets. Spoon some of the liquid from the pan on to the chicken. I garnished with some chopped fresh basil and some grated parmesan (of course). While the chicken is in the oven you could throw together a salad and put a couple of potatoes in the microwave for the carb. And, you could tear a piece of dough from the bread dough stash in the fridge and put it in the oven or the toaster oven for some of Poppop’s homemade bread to dip in the sauce.

- 2 boneless skinless chicken breast
- 2 fresh lemons quartered
- 4 cloves garlic minced
- 1 teaspoon dried basil
- 1/2 cup extra virgin olive oil
- 1/2 cup white wine
- 1 teaspoon salt
- 1 teaspoon black pepper
