Roasted Sweet Potatoes
Roasted Sweet Potatoes with Cinnamon is a favorite of ours. We really like it and every time we make it for company they tell us how good it is. The pic of the finished product isn’t my best photography work, but, ignore my photo skills and try this recipe anyway. It defiantly qualifies as quick and easy. And it’s gluten free.

A real quick and easy carb
Ingredients
- 2 medium size sweet potatoes
- Olive oil
- Powdered Cinnamon
- Garlic powder
- salt and pepper
Instructions
- Preheat oven at 400F
- Peel the sweet potatoes and cut into chunks (pieces) a little smaller then golf ball size.
- Put the pieces in a bowl and drizzle with olive oil.
- Lightly sprinkle with the cinnamon, salt, pepper and garlic powder.
- Toss it with a large spoon.
- Redrizzle, resprinkle and retoss.
- Get out a baking pan large enough to handle the chunks spread out in one layer without them piling up. Line it with foil and spray or wipe with olive oil.
- Bake for about 8-10 minutes and poke them with a fork to see if they are as done as YOU want them.
- Serve them up! You’ll like them I promise.
