Set your oven at 450°F. For a real easy cleanup just line a cookie sheet or baking pan with aluminum foil. Cut up your carrots, the potatoes and lay out the skirt steak. Drizzle everything with olive oil. Sprinkle with salt, pepper and grated parmesan cheese. Toss the carrots and potatoes. Turn the skirt steak over and repeat the drizzle, sprinkle, toss, etc. performance.
Put it in the oven. Depending on how rare or done that you want your steak it will probably be done before the veggies. Test it with a meat thermometer or with the poke test - The softer it is the more rare it is and of course the firmer it is the more well done it is - If it is ready just take it out of the oven and let it rest on the cutting board while the veggies finish up. Test them with a fork and when they are nearly as done as YOU want them slice up the skirt steak crossways against the grain and serve up your Skirt Steak Dinner. If you want to, sprinkle it with a little dried parsley or basil to jazz it up a little.

Psst....You could use Flank Steak instead of skirt steak. Nobody will know.
