Oven Baked One Pan Pork Chops and Veggies

Oven baked pork chops, potatoes and broccoli all in one pan.

Ingredients
 
 

  • olive oil
  • 2 6 oz. (appx.) boneless pork chops or bone in - just get them a little bigger
  • salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon red pepper flakes optional
  • 1 teaspoon dried basil
  • 1 cup grated parmesan cheese divided - or more, if you're feeling cheesy
  • 2 medium potatoes halved then sliced into 1/4" slices
  • 3 cups broccoli florets

Instructions
 

  • Set the oven at 400°F/200°C. Line a cookie sheet with aluminum foil and spray or coat it with olive oil. Lay the pork chops in the pan. Lightly drizzle olive oil on both sides of the chops then salt, pepper, red pepper flakes (optional), garlic powder, dried basil and lots of grated parmesan cheese on both sides. Press it all onto the meat with a wide knife or spatula.
  • Cut the potatoes in half lengthwise then slice about 1/4" (6mm) thick. Spread the potatoes and broccoli out around the pork chops and drizzle them with olive oil. Lightly salt, pepper and garlic powder. Then a heavy dose of grated parmesan. Stir them up a little to get them more evenly coated. Then sprinkle the rest of the grated parmesan all over everything.
  • Into the oven and when the pork chops reach 155°/68°C on an instant read meat thermometer they are done and so are the veggies. (15-20 minutes)
  • Then serve up your Oven Baked Pork Chops meal. Maybe with a nice merlot. No, absolutely with a nice merlot! Bon Appetit!

Notes

This recipe also works real well with chicken tenders, breasts or thighs of course just cook the chicken until 170F/77C on the meat thermometer.
