Ingredients
4chicken tendersor 2 small boneless skinless breasts
1egg
2 and 3/4cupmilkdivided-3/4 cup for egg wash-2 cups for gravy
1cupflourdivided-1/2 cup for dipping-1/2 cup for gravy
1/2cupgrated parmesan cheese
1teaspoongarlic powder
salt and pepperto taste
2pattiesbreakfast sausageor 3-4 strips of bacon. Cooked
2tablespoonsbutter
Instructions
Set the oven at 450°F. Line a baking pan with foil and spray oil it. Whisk the egg and the milk together in bowl. In another bowl mix the flour, grated parmesan cheese, garlic powder, salt and pepper together. Instead of garlic powder and parmesan you can use whatever your creative side might dictate. Like cayenne pepper or basil or rosemary or anything that YOU want.
Dip the chicken in the flour mixture getting the pieces well coated. Then into the egg wash. Then back in the flour mix. Then into the pan. Then into the oven goes the pan.
Put a skillet on at medium and add the butter. We always have some cooked bacon and cooked breakfast sausage in the freezer so tonight I'm going to chop up some sausage patties to jazz up the gravy a little. Add the sausage to the pan and heat it up.
When the butter has melted and the sausage is warmed up add the flour and stir it in with the fat until it has formed a paste. Cook the paste a couple of minutes stirring all the while. Add the milk. Lightly salt and pepper. Mix it up as it thickens. If it is too thick just add a little more milk and if it is too thin add a couple of pinches of flour. Get it to the thickness that you want.
Check the chicken and when the juices run clear or it reads 170°F on an instant read meat thermometer they are done - usually about 8- 10 minutes.
