Put a skillet on the stove at medium high and add enough olive oil to thoroughly coat the bottom. Salt and pepper both sides of the chicken filets and cook them in the skillet until they are firm to a poke or read 165° on a meat thermometer.
While the chicken is cooking cut up the veggies. These are the vegetables for tonights One Skillet Chicken and Veggies. A yellow bell pepper, A zucchini, some onion, a jalapeño pepper and some garlic. But after the pepper, onion and garlic just about anything else that you have on hand will make some good additions to your One Skillet Chicken and Veggies.
When the filets are done remove them to a dish that will catch the drippings.Put the veggies in the skillet and toss them a few times as they cook.
When they are almost as done as you want them, put the chicken back in the skillet to heat back up as the veggies get done cooking. Then serve it up and enjoy!
