12medium to large medium to large shrimppeeled and deveined
1medium sizefresh zucchinisliced into appx. 3/8 " slices
1/2medium sizeonioncut into thin strips or slices
2small handfuls frozen french fry cut potatoesor 1 medium size potatoes cut into french fry shapes
1tablespoongarlic powder
3/4cupgrated parmasan cheese
3/4teaspoonsalt
1/2teaspoonblack pepper
1/2cupolive oilplus a little to grease the sheet pan
ground paprika
Instructions
Set the oven at 400. Line a sheet pan With aluminum foil and lightly spray or wipe it olive oil.If your shrimp is frozen just put as many as you need in a bowl of water to thaw out as you cut up the veggies.
Slice the zucchini in about 3/8" slices. Cut up the onion into thin strips or slices. For the potatoes we got lazy and used these frozen pre cut french fry shaped ones. Didn't thaw them out just charged on. Or you could cut up a fresh potato into french fry shapes.
Just put all of the ingredients in a bowl and kinda gently mix them all together.
Then spread everything out on the sheet pan and sprinkle it all with some paprika.
Bake it in the oven for 20 - 25 minutes until the shrimp is firm and opaque in the middle. The veggies will also be done. Then just spoon it out on to the plates and enjoy your One Sheet Pan Shrimp Dinner.
