Instructions
Thaw out the chicken tenders or breasts in the microwave. In the few minutes that takes cut up your veggies. Put a skillet on at medium high and add the olive oil. When the chicken is thawed cut it up into about 3/4" - 1" chunks. Put the chicken into the skillet and sprinkle with salt, pepper and garlic powder. Stir them up a few times as they cook. When the chicken pieces start to get brown on all sides remove them to a dish that will catch the drippings.
Add the chicken broth and the rice to the pan and bring it to a boil. Stir with a wooden spoon to get the chicken bits off the bottom and mixed in with the broth and rice. Reduce the heat to a fast simmer and cook until the rice is just starting to soften up. Then add the lemon and the broccoli. Return the chicken with the drippings to the skillet.
Stir it all together and stir a few more times as the chicken warms back up and the rice finishes cooking. When the rice is as done as you want it put in the tomatoes.
Stir the tomatoes into the mix and just let them start to get warm, not mushy. Then serve up your One Pot Quick Easy Chicken Dinner. As quick and easy as it is, it is still delish. Of course you could make more than you need for this meal and freeze the extra in some zip-loc bags for a weeknight nuke it no brainer on some night when you are really in a rush. A chilled bottle of Italian Soave would go great with your One Pot Quick Easy Chicken Dinner.
